Properties:
White powder crystal, soluble in water, water solution near neutral, insoluble in ethanol.It often exists in the form of a hydrate (Na3HP2O7·H2O) and the crystal water is not easily removed.
When heated to above 170 ℃, it can be broken down slowly into sodium acid pyrophosphateand sodium pyrophosphate; when more than 240 ℃ ,it is decomposed into metaphosphate.

In food industry, it was used as water retention agent, emulsifier , Flavour enhancer and so on.
